YUMMY RECIPE!! (The kids will eat too!)

Here is another one of my MIL's fabulous recipes.  It has been passed down a few generations. Once again, I just have to say it, my Mom-in-law is the absolute best!  She's one of the best people I know.  I love her and respect her in so many ways.
So, without further ado, here is her SQUASH & CRACKER CASSEROLE:
6-8 yellow squash (you can use the sliced frozen if out of season or not available)
Chopped onion
Saltine crackers
American cheese slices
Butter
1 egg
Salt, Pepper, Nature's Seasoning (by Morton)
Boil sliced squash with some chopped onion (amount to your liking) until tender.  Drain completely.  Add about four tablespoons of butter, and seasonings to taste and mash with a potato masher.  (Add a little more butter as needed.)  Add beaten egg and mix together well.
Spray an 8x8 pyrex dish with non-stick spray.  Pour squash mixture into the dish.  Layer the top of the dish with cheese slices.
Roll out half a pack or so of saltine crackers in a zip lock bag with a rolling pin.  Roll out until crushed into fine crumbs.  Pour crumbs evenly on top of casserole.  Some people might mix the crumbs with some melted butter.  I spray the top with a non-butter spray (Can't believe it's Not Butter or Parkay's version) for a healthier alternative.
There's enough butter and cheese already, right?
Bake uncovered in a preheated oven at 350 for about 20 minutes.  Let cool a minute or two before serving.  Fabulous!  DEEE-lilly-icious!!!

Oh, my goodness, this sounds like it will taste just like my pan-fried summer squash, only with LESS WORK!! I think I love your MIL, too!

We love squash. I will have to try this.. squash is the only thing I plant anymore because we love it so much.. no farming or cows.. more time.. more squash.. ha ha..

This is very yummy. And, make it a time or two to figure out how much butter you want to use, etc.

But the kids love it!! (And, yes, they eat squash this way!) DH loves it too (but he'll eat squash anyhow).

Sounds kind of yummy but I'm not big on American cheese though my kids love it. Wonder how it would work w/ some mild cheddar. . .
