Meat and Potato Casserole

Here is a family recipe that is easy, inexpensive and totally YUM-YUM-YUMMY!

Hubby had an extra serving last night and when he does that it means it came out exactly right, LOL!

MEAT and POTATO CASSEROLE

1 lb ground beef
1 can cream of mushroom soup
8 oz of sour cream
new potatoes (I didn't have them so I used regular potatoes and it was still shlurpy~)
American Cheese (grated)
onion; minced garlic

Brown the meat with onion, minced garlic, and salt and pepper to taste.  Add in soup and sour cream when meat is fully cooked.  (You might need to drain the meat first).

Par-boil the potatoes for about 15 minutes.  Slice thinly (it is up to you if you want to leave the skin)
Layer the meat mixture in the bottom of your casserole dish.  Then, layer your sliced potatoes.  Next cover with grated American cheese.

(You may layer this twice, if you like; but with the amount of ingredients above I only do one layer.)

Bake at 350 for about 30 minutes, until bubbly on top.

YUM!! I think this is one of those perfect comfort foods -- unless you are a vegetarian. ;)
I made this same basic casserole with noodles on Sunday night and called it poor man's Beef Stroganoff.
We got another 5 inches of snow last night -- heavy wet stuff this time, perfect for giant snowmen! (Over the weekend it was dry and powdery and perfect for skiing.) And we have another storm coming in on Friday night! Yippee!! I love snow.
